
Three Blends, One Standard
We roasted coffee for cold brew for five years before we sold a single bag of beans.
Not because we couldn't. Because we weren't ready to put our name on one.
Since the beginning of NORSE, every bottle of cold brew we've made has started the same way: with coffee selected, blended and roasted for the cup we wanted to create. Roasting was never something happening in the background. It was part of the product from day one. We simply never sold those beans on their own.
That changes now.
Our first whole-bean collection brings together three blends, each created for a different expression of coffee. Primaeval Blend is deeper and more grounded, built around woody character, black cherry and roasted hazelnut. Scandinavian Blend takes a lighter Nordic approach — clean, balanced and made to work beautifully as both filter coffee and a modern espresso. And New Haven Blend was developed specifically for filter brewing, where clarity, aroma and the character of the coffee have nowhere to hide.
Different origins. Different roast profiles. Different ways to brew them. But one standard behind all three.
That standard comes from five years of making cold brew, where small decisions become very obvious at scale. The choice of origin matters. The roast matters. Development time matters. Consistency matters. And ultimately, what matters most is what ends up in the cup.
We could have launched coffee beans years ago. Instead, we kept roasting, tasting and learning.
Because putting coffee in a NORSE bag means something different from simply having coffee to sell.
These are the three blends we decided were ready.
Five years in the making. Now they're finally on the shelf.
Primaeval Blend — Built for Espresso
Woody, black cherry, roasted hazelnut. Brazil, Ethiopia, Kenya. Named after a forest in Eastern Europe that's never been logged, cleared, or hurried along, Primaeval Blend runs on the same instinct: nothing added, nothing dressed up. It's built for pressure — pull it as espresso and the three origins show up together, in order.
New Haven Blend — Built for Espresso
Roasted cocoa and toasted nuts up front, softening into caramelized pear and apricot, carried by a note of warm teak wood. Brazil, Costa Rica, Kenya. Named for Nyhavn — Copenhagen's "new harbor" — not as a claim about where the beans are from, but because a harbor is where far-travelled things finally get to arrive. Also built for espresso.
Scandinavian Blend — Built for Filter, Drip, and French Press
Our first blend that isn't espresso. A crisp red-apple attack opens into a heart of milk chocolate — round, silky, the kind of body Nordic filter coffee is built around — and settles into a warm, roasted-hazelnut finish. Brazil, Colombia, Ethiopia, roasted medium-light. This is the blend for the part of the day cold brew and espresso don't cover: a slow filter cup, meant to sit next to something you're actually going to eat.
Three blends, three methods, one roast standard behind all of them. More are coming — none of them in a hurry either.
