Nørse was born in Canada in 2021, founded by Steve and Alex — two friends shaped by different corners of the country and different threads of the world. Steve, rooted in Toronto's restless energy and multicultural pulse. Alex, formed by Montréal's creative spirit and its deep European sensibility. Between them, English, French, Swedish and Polish cultures — and a stubborn shared belief that great coffee was worth doing slowly.

The name came naturally. Nørse — ancient, unadorned, carrying the weight of Scandinavian craft traditions that have always valued restraint over excess, quality over convenience. It honoured their European roots while planting something new on Canadian soil. Fierce in its simplicity. Quiet in its confidence. Exactly what they wanted to build.

Cold brew became their common language. Not made in minutes, but steeped over hours — slowly, deliberately — until everything harsh falls away and only the smooth, true character of the bean remains. No shortcuts. No compromise. Just time doing what it does best.
