
Dark Chocolate Espresso Mousse

Ingredients
- Dark chocolate (70%+), chopped180 g
- Nørse cold espresso concentrate 8:130 ml
- Heavy cream300 ml
- Vanilla extract1 tsp
- Pinch of salt1 pinch
- White chocolate, for drizzle (optional)30 g
Method
- 01
Melt the dark chocolate in a microwave-safe bowl in 20-second bursts, stirring each time, until smooth.

Stir in the Nørse cold espresso concentrate and pinch of salt until fully combined. Set aside to cool slightly.

Pour the heavy cream into a large bowl. Whip with a hand mixer until it starts to thicken. Add vanilla extract and continue whipping to soft peaks.

Fold the chocolate mixture into the whipped cream gently using a spatula, keeping as much air as possible.

Spoon into serving glasses or ramekins. Refrigerate for at least 2 hours.

Before serving, drizzle with melted white chocolate if desired.
NORSE Note
Use 2 tbsp (30 ml) NORSE 8:1 concentrate in place of espresso powder dissolved in liquid. Stir it directly into the melted chocolate.
